Borrowing Recipes

It is time for another delicious What I Ate Wednesday. Normally I would show you a day in the life of what I have been eating, but today I’m going to show you what I have been making off other people’s blogs. So without further ado, I’m linking up with Jen over at Peas and Crayons to bring you a special

Peas and Crayons

First up was some oatmeal over at The Real Life RD. I am normally not an oatmeal person, that is my polite way of saying “I think oatmeal is gross” and while we are on it I am one of the only food bloggers out there who doesn’t like chickpeas. There I said it, buffalo chickpeas are not a good substitute for buffalo chicken. End of story. I digress, so Robyn posts these pictures of chocolate oatmeal with peanut butter. Hmmm you have my attention, I thought why not try it, worse case I throw it down the drain and crow my victory of hating all oatmeal.

There was no crowing, only devouring the bowl and thinking about seconds, luckily I was too full. People go and try the oatmeal she made here. It’s worth it!

Second recipe came from Miss Martha herself. I saw it in one of the magazines I was catching up on this past weekend (I think it was the Mother’s Day issue to be honest) and knew I had to make it for my boyfriend who loves all things carby and blueberry.

He loved it, I loved it, some is leftover in the freezer. Need I say more? It was like a cross between a cake, blueberry muffin and a pancake. Delicious! She was nice enough to put the recipe on her website so you can find that one here. 

Next on the list, does anyone remember my obsession with mac and cheese? Well if you don’t I won’t downplay it, I can eat it until I get sick. I love the stuff and put it in my mouth as much as possible. So last week Liz from I Heart Vegetables posted a comment on my blog. I read all comments, respond to all comments and then head over to check out your webpage if I have one. See I don’t get tons of comments so it’s pretty easy to do. I head on over and fall in love, she writes beautifully and the first thing I see is Spaghetti Squash Mac and Cheese that is 150 calories per serving. I set out to make it for lunches this week, thinking worst case I dump it if I hate it and then go buy lunch.

It is phenomenal, I put some crushed garlic and some red pepper flakes on mine before I baked it and love it! Seriously the squash does not bring this dish down. The recipe is here. 

Last but not least I have been craving beet and spinach salads like a mad woman but didn’t want to just top it with some boring vinegar so I did a quick google search and came up with a recipe from Brianne at Cupcakes and Kale Chips. I didn’t add as much oil as she did and I might have used a tad more greek yogurt, not sure  I didn’t measure but look at the creamy goodness this is!

It looks like soup and tastes like heaven! I used about a third of this on my salad and then put the rest in the fridge to save. I left it uncovered so now the fridge smells like a delicious balsamic viniagrette dressing. Good thing the boyfriend is away for work! She posted the recipe here.
