Recipe Roundup

I don’t know what has gotten into me, but if you follow me on instagram (you really should if you don’t ;P) I have been cooking up a storm. I have no clue where the urge is coming from but right now I’m just going with it. To bring you all the things I’m making I’m linking up with Jen over at Peas and Crayons for a What I Ate Wednesday this past week.

First up is what I made on Friday. I was overtired, cranky and in no mood to deal with food. I came home and had this BBQ Peach Chicken marinating in the fridge. I felt like it needed something a little  more though since our grill has been out of commission for the past few days. Luckily in the freezer I had some shredded potatoes so I put those on the top and made an awesome hash brown chicken.

It’s so easy to make, all you need to do is choose a marinate, then top your chicken with some shredded potatoes. If they are frozen put them in a saute pan for a few minutes until they are defrosted. Then bake at 400 for about 20 minutes or until the juices run clear. I then threw the broiler on to crisp up the potatoes a little more. The boyfriend was a fan and he is normally anti mixing.

I then wanted to make something for the boyfriend that he loved, so I decided to do pulled pork. I’m not a BBQ fan at all, I know weird have me committed, but I just don’t really like it. It’s too sweet for my taste. So I started to read some blogs on how people eat their pulled pork. One lady wrote that she liked to put some pickled radishes in. Hmmm…. I like pickles and I like radishes, I think I should like that. I found a recipe that was so easy, mix all ingredients but garlic and radishes and bring to a simmer to dissolve. While that is on the stove slice up two cloves of garlic and radishes and put in a canning jar.

Then when the liquid has completely dissolved pour into jar and put into the fridge for at least 48 hours.

So easy! The complete recipe can be found on this website. The pulled pork was also so easy to make. It was just a set and forget. With three indgredients you really can’t beat it! All you need is:

Crock Pot

Can of Root Beer

2lbs of Pork Loin

BBQ Sauce

Yep that is all! Put the pork and the root beer in a slow cooker on low for 6 hours. Then drain the root beer, use forks to pull the meat apart and add BBQ sauce. Seriously that is it! I think I liked it even more because it was that easy.
