What I’ve Been Eating Lately

With traveling all last week and not doing a full grocery shopping trip my eats have been all over the place. I haven’t eaten as much fresh as I would have liked, a lot has been premade or from a bag, which isn’t how I like to eat normally. Luckily I have made good choices for the most part and have been able to maintain my weight through it. I’m going to link up with Jen over at Peas and Crayons to bring you the eats today!

Peas and Crayons

First up is a go-to breakfast now that it is summer and the produce is everywhere. It’s simple yet so delicious, sometimes I even use a fork and mash the berries to make it more like a jam.

photo 1Pete’s Coffee and KIND granola. I got the coffee while I was trying to bounce back from my flight into St. Louis and they even had mint to infuse it with. I’m obsessed with iced mint coffee right now, so refreshing. I also loved the KIND granola, it was so peanut buttery. The only thing, if you are expecting actual clusters it disappoints as a lot of the reviews have stated. I never eat it plain, I always throw it in some yogurt or ice cream so I didn’t mind. photo 3

Egg white omelette with american cheese on a bed of fresh greens. A few weekends ago I was at the Boilermaker and Erin’s mom gave me a whole bad full of greens from her garden. I inhaled them, I couldn’t get enough of the fresh taste. Yes I even ate them for breakfast! photo 12Next up are two package food items. The first is Vegetable Wheat Thins and the second is Special K chips. To be honest, neither I was a huge fan of. They reminded me of my dieting days and both tasted very fake. I would rather a grain packed cracker or a hunk of fresh bread. I didn’t feel good after eating either one of these. photo 15photo 14

Don’t waste your dollars on this next bar. It was almost like a fig newton cookie texture but didn’t taste of peanuts at all. I would rather a Vega One bar any day of the week. photo 13Do spend your money on this though! Oh my gosh are these coconut bites so good. They aren’t too sweet thanks to the dark chocolate and they are so crispy. I loved to have a few of them when my sweet tooth kicked in. The punch of the dark chocolate cuts out any sugar craving you have and honestly can you go wrong with chocolate and coconut?! photo 2

The reason I was able to stay awake through all of the meetings! Seriously, you can’t leave home without this stuff if you need a quick fix and don’t want coffee or soda. photo 11If you take nothing away from this post take away that Grillo’s Hot Pickles are a must have. Seriously they are so good. They are fresh made pickles that have an awesome snap when you bite into them. The hot is quite spicy but if you are like me and like your food with a little kick you will love these. The brininess is spot on with not too much salt and not too much vinegar and the garlic and fennel they add just kick these over the top. Yes I’ve eaten more than one jug at this point!

Do you like sweet or salty? I’m beginning to like both as a combination. Still can’t have fruit in my savory foods though.

    1. I love it way more than Spark! The flavor is a lot lighter which helps. Totally copy me, I’ve copied you a few times 🙂
