PB & J Overnight Oats

You guys, I cannot get enough of this breakfast! I’m not one who normally likes oatmeal, I believe I have said it on multiple occasions. The mushy warm feeling in my mouth totally grosses me out and I end up not eating it, enter overnight oats where I get cold still semi chewy oatmeal. It takes away from the texture aspect but after about a year of eating these there wasn’t one that really made me excited to eat it for breakfast. I always viewed it as the healthy alternative and would rather have toast with peanut butter or a shake. The other day though I was craving a PB and J for breakfast so I toasted up my Genius bread and spread my Jelly on one side and PB on the other.

After the first bite I noticed the ingredients were getting absorbed into the bread and it was getting very dry. My quick fix would be to just add more of each but then a light bulb went off in my head, what if I made PB and J overnight oats. Those always stay mushy! I am in love with this recipe so let’s hope I don’t wear it out by overeating it.

Peanut Butter and Jelly Overnight Oats
Serves 1
  • 1/2 Cup of Old Fashion Oatmeal (not the quick make kind)
  • 1/3 Cup of Milk 
  • 1 Tsp Chia Seeds
  • 1.5 heaping TBs of Peanut Butter
  • 1 TB Jam
The night before mix the oatmeal, milk, chia seeds and pb together. This will be a tad tricky at first as the pb just wants to remain in a clump. Don’t fret it will eventually become smooth. When I make this it is still a tad watery when I put it in the fridge. The next am take it out and swirl in the jam and enjoy. 
This is not really clean eating as the jam I use is one my nana made and has sugar in it. I’m sure I could make some clean jam, but this stuff is sinfully good so I’m going to continue to use it. Also if I’m not trying to use up the milk in the fridge I’ll use the So Good Coconut Milk instead, the store I went to didn’t have it though so I was stuck with organic milk this week.
