“He Asked For Seconds Mac and Cheese”

I would like to think that this blog is a judgement free zone. I know that I don’t judge you, but then again I don’t know you, well besides you mama. If for some reason you are a judgy person you might not want to continue forward, because I’m going to share with you my mac and cheese recipe and boy oh boy could the calorie conscience people judge.

Ok so now that we got rid of those fuddy duddies that don’t let loose once in awhile I will lead you down the path of creamy carby bliss. So come with me on my “He Asked For Seconds Mac and Cheese” adventure.

“He Asked For Seconds Mac and Cheese”
Serves a zillion. Just kidding about 6 dinner portions
  • 1lb Box of Macaroni (or your favorite noodle)
  • 1 Egg
  • 7 TB of Butter
  • 1/4 Cup of Flour
  • 3 Cups of Half and Half
  • 2 Cups of Shredded Cheese
  • 8oz of Velveeta 
  • Salt and Pepper
  • Chiabatta Roll
  • 5 Slices of Bacon
Are you still with me after that ingredient list? Listen, this is birthday food, this isn’t every day food. It’s a celebration and it’s a special occasion, this isn’t Thursday night every week dinner. One serving won’t kill you, unless you are lactose intolerant, then your screwed. 
Ok so we preheat our oven to 350 degrees. Then put your macaroni on to cook, only take whatever the package says for time and take 3 minutes off. So if your package tells you to cook your macaroni for 10 minutes only cook it for 7. Once it is done cooking drain and set aside.
While that is cooking remember a watched pot never boils, so lets start on this delicious sauce! Take and melt in a large or medium pot 5 TB of butter over medium low heat. While that is melting don’t just stand there, take the egg, yes I said egg just go with me, and crack it in a little bowl and scramble it fully. After you scramble your egg you should see your butter fully melted, so take and add the 1/4 cup of flower to the butter and with a wooden spoon stir this sucker for about 4 or 5 minutes. First off this will take out all the clumps and it will also keep it from burning. I’m not kidding don’t stop stirring, this sucker will burn quick! You will know when this is done when it turns a beautiful yellow color and looks almost like a pudding it is so smooth. 
Then add the half and half to the pot and turn the head down a little and continue to stir for a few minutes until this is fully incorporated and there are zero clumps, this means it is the same color sauce people. No polka dot sauce! Take out about a 1/4 of a cup of this liquid at this time and mix into the scrambled egg you have left off to the side and sir it all together this will make it so you don’t get scrambled eggs when you dump the egg into the big pot. When the egg mixture is warm and creamy dump it into the pot with the butter, flour half and half sauce and stir to fully incorporate. Are we seeing a pattern here? Next dump your 2 cups of shredded cheese in and stir, yes you guessed it, until it is fully incorporated. I chose to use Cabot Mild Cheddar but any cheese that isn’t too stringy, ie don’t use mozzarella, will work. This just needs to be stirred about once a minute so at this time take and cube up your velveeta so it isn’t just one just block going in. Then add your velveeta to this concoction turn to low heat and continue to stir about once per minute. 
While this extremely delicious and full of calcium sauce is slowly melting to perfection take your chiabatta roll and rip it into large chunks. Then take these large chunks and put them into a food processor, blender, magic bullet, whatever you have folks and make them into bread crumbs. Don’t forget your cheese, stir folks stir!! Now take and heat over medium heat a frying pan, you are going to use it in a second. Put those fantastic bread crumbs aside and take your bacon and put it in your machine and puree it. Ewww gross!! Yep this is going to look nasty, like some pink paste. Relax, this is what it is suppose to look like. You’re still stirring correct?! Take a spatula  and plop that paste right down on your frying pan and start to brown this stuff like you would ground beef. This will start to come together and form bacon bits, wahoo! Make sure that they are fully cooked and crunchy but  not burned. 
Drain that bad boy grease from the pan and mix in your homemade bread crumbs to create a crumb and bacon mixture. By this time your cheese mixture should be fully melted and goopy. If it isn’t please make sure everything is a wonderful orange color (WHO is dying right now) and mix the pasta and cheese sauce together in a large baking sheet or a large Corningware dish which is what I like to use. Then spread those awesome bread crumbs and bacon over the top. Take with your fingers and break up those remaining two TB of butter and put them over the top. Then throw this bad boy in the oven for about 20 minutes or until the breadcrumbs are nicely roasted. 
Take out of the oven and scoop into bowls and dive in! I froze the rest of this stuff, so I will come back when we finally take it out of the freezer and let you know how it worked out reheating from a frozen state.
