Remember back here when I was just slammed at work? Well it is that same thing this week, I am luckily almost done though which is really nice, but it makes for some tiring nights. I managed to go grocery shopping on Monday night, even though I got out late and was really tired I knew that if I didn’t do it then it probably wouldn’t get done but I’m glad I did since I’ve been able to have real food still instead of going out every night for food. My waist also thanks me!
I can’t imagine if I had to do this all the time though, if my week nights were always late and I was always pressed for time, getting dinner on the table is hard enough when I have time, let alone when I am overtired and semi stressed. So what do you do? Below is what my meals look like for this week, I have to plan three and the bf plans one like always, except he planned Five Guys Burgers this week (cheater).
Monday: Pasta with mozzarella, tomatoes and basil
So easy to make. All you do is put a pot of water for pasta on to boil and then some olive oil in a frying pan and on medium heat you warm up some split cherry tomatoes. While those are warming up chop up a few cloves of garlic and slice up a handful of fresh basil leaves. Put the garlic and basil in the frying pan and around this time you can also put the pasta in the boiling water. Cook pasta according to box directions and turn heat down on garlic/tomato mixture. While the pasta is cooking cut up chunks of mozzarella and then drain pasta. Toss the pasta with the olive oil mixture and then add the mozzarella at the end and give it a quick toss. The boyfriend really liked this which was nice since it was pretty easy to make.
