Weekend Recap

Sadly this weekend didn’t really go as planned, not sadly for me but sadly in the reasoning. My boyfriends grandfather has been having some heart troubles and on Thursday he was omitted into the hospital, so we went Friday and Saturday to visit him. Send positive thoughts out for him, hopefully he can go home soon!

Friday after work I went straight home and met him and then we took one car into the city. After sitting with him for an hour we decided we were going to go out to eat, but there was no tables at any restaurant and the bar we went to was so loud we couldn’t even hear each other sitting right next to each other, so we walked back to the car and ordered food to be delivered when we got home. That ended up working out for the best as we both got things we really loved, plus had leftovers for lunch the next day.

Saturday we slept in and then went out shopping for awhile. I needed some new long sleeve shirts as well as a dress for Erin’s rehearsal dinner and he needed to get his pants tailored. We went to the mall, which I’m not a huge fan of, but I didn’t realize they had a Gap there! I believe I’ve said it before, but I’ll say it again, I love The Gap. I found two shirts that I loved but when the lady told me that everything was 50% off I went and got a third shirt. I went out of the store spending less than $30. The next two stores were fails in finding a dress, but I then went to Express and found a great one of the dinner.

After that we went home and worked out. I asked him the night before if he would be willing to try a workout I found at olivesnwine.com which actually came from fitncookies.com. It seemed very doable as the farthest we would have to run would be 3 miles in total. So we were off, and I thought it was a great workout but I also work these muscles at least twice a week in my classes at the gym. The boyfriend does not and was sore for a day after. I will be for sure doing this workout again though!

We then showered and headed off to the hospital and to meet up with some of his friends after. After a long day though we called it a night around 11:30. The next morning we woke up to rain so we went to the store to get breakfast stuff and hunker down for the day. I ended up making biscuits which were pretty good, and a nice change of pace for breakfast.

It was then a clean-a-thon until the Patriots game at one, I ended up doing over 5 loads of laundry yesterday, but this morning when the house looked good I was happy we spent the day doing that. Around 5 I started to get hungry since I had a late breakfast and didn’t eat very many of the nachos the boyfriend made, so I started dinner. I made Sheppard’s Pie and I should name it Three Servings Pie as I couldn’t get enough of it. The boyfriend liked it too and ate almost all of it even though he had a ton of nachos a few hours earlier. It was pretty easy to make and now I have lunch for two days! The recipe is below.

Sheppard’s Pie
  • 5 Large Potatoes
  • 5 Ears of Corn
  • 1Lb of Ground Beef
  • 1 TB of Worcestershire Sauce
  • 1 TSP Sage
  • Salt and Pepper

Bring a large pot of salted water to a boil. Peel and cube the potatoes (or don’t peel if you like the skins in the mashed potatoes just wash) and put into the boiling water. Boil potatoes until a fork easily slides through them, normally about 15-20 minutes. While potatoes are boiling over medium high heat brown the ground beef and about half way through the browning process add the Worcestershire Sauce and sage. In a large casserole dish (I like to use circular ones but you can use what you want) put the browned meat at the bottom. Then take the corn and remove the kernels from the stalks and put those on top of the ground meat so you now have two layers. Preheat oven to 350 degrees and take the potatoes off the stove. Drain potatoes and mash them with whatever you like. I normally like some cream cheese and garlic but have put rosemary, shredded cheese and other things in as well. Spoon mashed potatoes over the corn to make your third and final layer. Put in the middle of the oven and bake for 35-40 minutes, this will cook your corn and allow the flavors to develop together. Take out and serve right away.
