Man do I love date night, and last night was no exception especially since one of my besties, WHO and her husband came over for it. Let me back up though! Yesterday started off with a quick stop to Starbucks in the am. I was running out of K Cups for the office and don’t really like drinking any other coffee so I swung by and got a coffee as well as a pack of K Cups to last for a few weeks. By the time I got to the office I was starving so I had my breakfast of granola and yogurt then continued on the day. I was having massive trouble focusing yesterday, hopefully today won’t be as bad though!
The highlight came when it was snack time and I tried a new melon called Santa Claus melon. Yes, I 100% bought it for the name but the taste is fantastic too. It is almost pineapple looking inside but tastes like a mild banana and a honeydew cross-pollinated. I’m a huge fan!
Then I got to go home and get ready for WHO and her husband to come over. I made the grilled chicken here, and had it marinating for two days so all I had to do was hand it off to the boyfriend. Then I made a salad with a homemade dressing and some roasted potatoes. Sadly I don’t have a picture of the potatoes because I just wanted to get food out, but when they were telling me how good they were I thought I would pass along the recipe as well. So recipe for the salad dressing and the potatoes are below.
After dinner and catching up outside we went back in for a game of Cards Against Humanity which had us all dying. We only had three players so we would pull a random card from the deck and they turned out to be the funniest sometimes. We were in stitches by the time the game was over! After a quick clean up I sat down with the boyfriend to watch the Patriots game we had DVRd but by a few passes in I was sound asleep.
Good food and good friends just makes me complete and I slept like a baby!
I hope everyone has something fun on tap for the weekend. I get to spin with WHO tomorrow, go see the boyfriends mom who I adore, and then probably go to the beach! I’m excited to have a weekend at home finally. I also need to get some crafts for a little bachelorette thing I’m putting together, after I got my hot glue gun I’ve wanted to craft everything!
- 12 Small Fingerling Potatoes
- ¼ Cup Olive Oil
- 1 TB Corse Sea Salt
- 1 TSP Garlic
- ½ TB Minced Rosemary
- 2 TB Parmesan Cheese
Preheat the oven to 350 and line a baking pan with foil. Wash the potatoes and then split them into large bite-size chunks, most of mine just needed to be cut in half. Mix together the olive oil, salt, garlic and rosemary then coat the potatoes with the mixture. Lay flat on a baking pan and sprinkle the cheese on top. Cook for about 40 minutes giving them a toss about half way through.
- 1 Shallot
- 1 TSP Sea Salt
- 1 TB White Wine Vinegar
- 3 TB Olive Oil
- 2 TSP Dijon Mustard
Mince the shallot
and then combine with the salt and vinegar, let the mixture sit for about 10 minutes. Then add the mustard and olive oil whisking well until fully incorporated. Taste to make sure the flavors are on balance, if it is a little too tangy add more oil, if it is a little too oily add a touch more vinegar. Toss with your favorite greens and vegetables and enjoy!
