Going through my phone last night and clearing up pictures I realized that today was going to be a hodgepodge kind of blog day. Just recapping what’s been going on and what’s coming up. I can’t believe the summer is almost over, where did the time go?! It seems like yesterday the 4th was hot and sticky and I was headed off to NH. I don’t think there has been one weekend since June where the boyfriend and I had zero plans. Not that it is a bad thing that we are so busy, but it just makes the time and the weekends fly by.
The boyfriend has been cooking a lot for me lately, I’m sure he is thinking “yeah what the %^&*” but it is starting to become more 50/50. Though I still decide what we are going to eat because if left up to him we would be eating takeout or D’Angelo’s a few nights a week and then rice and steak the other few nights.
This was my breakfast sandwich this past weekend and boy was it phenomenal. I wasn’t feeling 100% Sunday morning due to the long night before so when 9:00 rolled around and we were eating breakfast this really hit the spot. I didn’t even need to get jam and put it on the sandwich like I have been, the flavors were just spot on. I later looked and he had gotten cage free eggs too, I was so happy!
Dinner Monday night was cheeseburgers. I had been having a huge craving for them so he not only went to the store and got the stuff but I came home from the gym and burgers and a salad were almost done and on the table. I polished off my burger in about five bites and told him it was lucky there weren’t extra’s like he sometimes makes or I would be having myself another one. Instead I just ate the rest of the salad! I put a few basil leaves on my burger and was dipping it in some homemade cucumber sauce (recipe below) that you can see in the bottom of this picture. I have been putting that sauce on everything!
My flowers finally bloomed! The only small problem is they are so heavy they all keep tipping over. I have a feeling it is because they were planted on a slight slope, but I have been outside many times to enjoy them. The sad part was, these were planted when I was home a lot on the weekends, but like I said earlier, I just haven’t been home so I haven’t been able to enjoy them as much as I would like. I’m glad they bloomed though and they smell heavenly!
For those of you who have known me for awhile know that I love Plants vs. Zombies. I started playing it later than normal about 3 years ago and quickly beat all the levels and then got all the achievements. Well I got a text from WHO the other morning telling me for iPhone users the game was finally out. I’m still on level one as I’m playing every single level and getting all the stars. Last time I went through too quickly, not this time!
This is a dessert I found in Martha Stewart magazine that finally came the other day. Since I haven’t been feeling 100% and have been drinking tea like a maniac I thought it would be a great thing to try. It was simply fantastic and I plan on having many more. If you were to make this for dinner guests after a meal you could always class it up, I wanted it pronto so it went in the first glass I could find.
- Tea Bag of your choosing
- 8oz Boiled water
- 1 Scoop of Ice Cream
The great thing about this is you can customize it to your flavor. I did a honey chamomile with a scoop of vanilla ice cream. You could do a fruit tea though with vanilla or a breakfast tea with a fruit ice cream. The possibilities are really endless, I just chose a non caffeine one though because I was having it after dinner and didn’t want to be awake for the rest of the night. All you do is place a scoop of ice cream in one glass and the tea and water in another. After about 8 minutes of seeping remove the tea bag and pour the tea over the ice cream and enjoy. If you don’t want to dirty two glasses you could always just brew together with the ice cream as well.
- 1 Large Cucumber
- 1 1/2 Cups of Greek Yogurt
- 1 TB Lemon Juice
- 3 Cloves of Garlic
- 2 TB Dill
Peel the cucumber then cut into large chunks. Put the large chunks into a food processor or blender and puree until almost all the chunks are gone. Then mix the remaining ingredients into the cucumber puree and chill. It is really so easy and so low in fat and calories, I got addicted when I went to Erin’s bridal shower
and we had the lunch at the Lebanese place. I didn’t make it exactly like they would as I wanted to be able to eat this with a lot and have it be low calorie and no fat.
