Recipe Recap

Yesterday started off with my homemade granola in yogurt with a spoonful of my Nana’s homemade jam. It was fantastic, although I went a little heavy handed on the jam! The peanut butter taste from the granola and the jam made it taste like a PB&J parfait.

Peanut Butter Granola

  • 3 TB of Peanut Butter
  • 2 TB of Honey
  • 1/4 TSP Cinnamon
  • 1/4 TSP Vanilla Extract
  • 1 Cup of Oats
  • 1/4 Cup Sunflower Seeds
  • 2 TB of Pumpkin Seeds
In a microwave safe bowl melt the peanut butter and the honey together. It took mine about 30 seconds but just watch yours, you want it smooth not burnt! Add cinnamon and vanilla to the mixture and make sure it is fully incorporated. Then add the oats and seeds and fully coat everything. Place on a baking pan and press flat then bake until crispy. I did mine at 325 for about 15 minutes, I think it could have taken another 15 minutes though as it isn’t as crunchy as I normally like. 
This held me over until lunch, I think the slight protein in the granola helped. For lunch it was another soup, this time a Cheese Burger one from Campbells. 
Not too bad but still missing something so it got some hot sauce as well. I think I need to make some homemade soups and since fall is right around the corner it is the perfect time to break out the crock pot and start! 

After a quick 3 mile run at the gym it was back home to make dinner. I had grand plans of making dinner and doing laundry but I was just beat, so dinner was the only thing that got done. It was very easy to throw together and turned out pretty good. I had a few complaints as the pasta wasn’t as fresh tasting as I would like it to be but the boyfriend loved it. 
Tortellini Bake

  • 1 package of Fresh Tortellini 
  • 1 Container of Fresh Mozzarella
  • Handful of Fresh Basil Leaves 
  • 3 Cups of Homemade Sauce (recipe below) 
Preheat your oven to 350 and grease a 9×9 baking dish. Boil your pasta for about half the time recommended on the package, you are going to cook it more in the oven and don’t want mushy pasta. Layer about a cup of sauce down on the bottom of the pan and then break up a few basil leaves and put on top of the sauce.
Put a layer of the tortellini down then a handful of the mozzarella.

Then continue layering until all pasta is used up. Put a final layer of sauce and cheese down and throw into the oven for 30 minutes until the cheese is melted and bubbly. Remove and let cool slightly before serving.

  • 2 Cups of additional water as mine was starting to dry out around 6.5 hours.
After dinner I was so tired I laid on the couch with the boyfriend and he and I watched the last two episodes of The Next Food Network Star. He was such a trooper and watched the whole season with me. I heart him huge. 
More laundry and perhaps a vacuum tonight as I didn’t do any of that last night and cooking is falling into the hands of the boyfriend! 
What are some home made soup recipes you have?
I tried a clam chowder one and it was GROSS. I actually didn’t eat clam chowder for almost 6 months after it. So I’m searching for something yummy.
