Good morning! I’m having a proud morning as I didn’t want to work out this morning yet still made it to the gym. The alarm went off and I snoozed once, yet while it was on snooze I was going back and forth on if I should go to the gym or not, when it went off again I dragged my butt out of bed and got ready. Walking into the gym I was so unmotivated, even going up the stairs was a big deal yet I still continued on and then made my way over to the treadmill. I started with a T-Pain song but knew if I didn’t have a serious kick in the pants the two miles I wanted to bang out was going to take me 30 minutes. So I turned on the Beyonce Super Bowl halftime show and said that every time she picks it up I can pick it up too. The next thing I knew the treadmill was slowing down and I was doing my cool down. Thank you B! So back to yesterday…
It started out with me just starving so I made my way over to Starbucks to get a coffee and finally got to gold level membership! Yay!!! I was super pumped and cannot wait for all the free stuff, it’s going to save me so much money.
Before I even made it to work the coffee was gone and I was still hungry so I dug into an apple which satisfied me all of 20 minutes and then I was hungry again.
So I got some almonds hoping they would hold me over until lunch which they did.
My coworker wanted to go out to lunch which I thought was a good idea and a great way to break up the week. He really liked a place we had gone to last week that I didn’t enjoy as much, but I figured I would give it one more shot. Halfway through the first half of my sandwich I stopped eating and decided that I just didn’t like the place. I was talking to WHO later in the afternoon and explaining how I have just gotten picky and she pointed out there is a difference between expecting quality and being a picky eater. Nothing wrong with not liking places if they don’t serve good quality food. So I won’t be eating at that place again! Luckily I had my lunch back in the office that I was talking about yesterday.
After work I headed back home and checked on my flowers, boy oh boy are they getting big! I cannot wait for them to bloom and the rose bush looks so much more contained with the new trellis! I’m going to have to learn how to prune these puppies though since the first flowering is starting to die.
The boyfriend came out and told me it was time to come inside eventually so I decided to make a fresh dinner to make up for the blah lunch I had that afternoon. I was inspired by Martha Stewart Living cover this month with last nights dinner but wanted to take it to the next level to make it a full meal and not just a side.
So I decided to add some cheese and some more flavor, the results were a fantastic meatless dinner that didn’t leave me feeling full and heavy but satisfied.
- Ciabatta Bread
- 8oz of Fresh Mozzarella
- Fresh Basil
- 2 Large Tomatoes
- Balsamic Vinegar
- Olive Oil
- Course Sea Salt
Drizzle balsamic vinegar on the bread, if you don’t like the vinegar taste like the boyfriend then drizzle some olive oil on it.
Then take your basil and lay the leaves on top of the mozzarella, you don’t need to completely cover the cheese, but it is a fantastic flavor so don’t be shy!
Then take your tomatoes and de-seed them and slice them thick on top of the basil. Drizzle with olive oil and sprinkle with the sea salt. Put in the over for about 10 minutes, or until the cheese is melted and the bread starts to crisp. Then serve.
