Two days down and four more to go! Luckily I have a nice long weekend break in the middle of that to relax and clear my head. I swear they are trying to kill me via powerpoint and excel models.
Yesterday started out kinda blah, I didn’t sleep at all the night before and was just anxious about my day sitting in a conference room all day with a VERY intense man. I mean this guy can’t stay still and moves all around, remembers everything and expects you to be on top of your game as much as he is. So like I said yesterday I was going to go about these next few days by eating healthy and getting as much sleep as possible. Help my body and mind any way I can to get through it is the main goal, so I started off yesterday with what can only be called a “Mud Smoothie”. Though it tastes fantastic it looks like dark Georgia clay.
It is very easy to make though and is VERY low on weight watcher points.
- 1/2 Cup of Blueberries
- 1/4 Cup of Raspberries
- Few Slices of a Peach
- 1 Banana
- 1/4 Cup of Banilla Yogurt (or any yogurt you like)
- Splash of water to get things moving
- 2 handfuls of spinach
Simply blend all ingredients together and enjoy. The key is to get the water in there at the right amount to get things going, if you have very juicy fruit you might not need any so be the judge. If you use frozen fruit you will need more.
Lunch was then ordered in for us, and like usual it wasn’t very healthy. Luckily there was a salad so instead of eating chicken, mac and cheese, and corn bread I had a few potato slices on top of a salad. It was very satisfying and I actually felt great about my choice.
I didn’t get home until after 9:30 and was so tempted to order out and get something junky but then I remembered making myself feel better with good choices. So I looked at what was in the fridge and decided to make what I am going to call “Poor Man’s Steak and Cheese”
I’m sure everyone here has the stuff in their fridge to make this, and it isn’t that bad at all. I wouldn’t suggest any restaurant carry this any time soon, well besides Braza
, but it satisfied me and didn’t cost me more inches to my waistline or any money.
Poor Man’s Steak and Cheese
- 3 slices of American Cheese
- 2 TB of Milk
- 2 slices of Roast Beef
- 4oz of Pasta
- Few Handfuls of Spinach
- Few cherry tomatoes
Cook pasta according to package, when done throw in the rest of the ingredients and mix until the spinach has been broken down and the cheese and milk has melted into a sauce.
Very easy, uses what you already have and works when you are in a pinch.

Do you normally eat takeout or delivery when you are busy and getting home late?
Normally yes, I do, but I have been really trying to not eat tons of junk and I never order salads or grilled chicken when I am out.
