Yesterday was a day of trying new recipes. One was fantastic and I will be making again, the other was alright but more an appetizer than a dinner and will not be making again unless it is for a party.
The morning started off with me still sore from Saturday’s workout, so I skipped going to the gym and doing the Body Pump class I wanted to try. I think I will try next Monday though and just not workout so hard on Saturday so I can make it. It is very early in the morning, but I know I will feel great after. Instead of going to the gym though I made a new smoothie after I showered. I found it on Pintrest and the description said it was an apple pie smoothie. It was fantastic and so filling that I didn’t even need a snack in between that and lunch. The picture was taken at work too, normally I’m all done with my smoothie before I even get into the office.
For lunch I packed leftovers, and was finally done with all of them in the fridge (now I have about three days worth of last night’s dinner though so it will be another week of leftover lunch) I threw in a ton of spinach again and it was better than the last time I had this because it has a lot more sauce.
After work I headed off to the gym to run and do abs. I managed to run a 5k in 28 minutes flat, which is about the best time I have ever gotten on a treadmill and close to one of my best race times. My mix is a little aggressive, I was very cranky when I got to the gym but after the run and abs and this mix I was much better.
I made it back to the boyfriends place in a much better mood and decided to make a buffalo chicken ring that I also found on Pintrest. I knew he loved buffalo chicken so I wanted to make him this for a fantastic dinner, didn’t turn out that way but he didn’t complain. The dish is alright, and like I said would be great for a party, but doesn’t have enough complex flavors to pass for dinner. It sounds great because it is basically buffalo chicken dip rolled up into crescent rolls, at least it wasn’t a total fail and now I know another appetizer to serve at the next get together I have.
The instructions on how to assemble the ring are here but the creator forgot to put how much of each you needed so I listed that below. Also for the chicken I baked it in a foil pack in the oven at 350 for 25 minutes to cook it.
- 1 Pound of Chicken
- 1 8oz Brick of Cream Cheese
- 1 Cup of Shredded Cheddar
- ½ cup of Franks Red Hot Sauce
- ½ cup of Ranch Dressing
