Grilled Chicken Marinade

As promised the two mixes from this weekend, first the girl power one that gave me an extra boost on a stressed out Friday and the 5 mile one.

 Monday morning started off as usual, an early morning trip to the gym. I was going to do the Stairmaster again but when I got there I was just rubber legged walking up the steps so I figured there was no way I would be able to do a full workout. So instead of doing something lazy I decided to make myself sweat by putting together a mini spin class. Though it was only 25 minutes I was dripping by the end of it and proud of myself for pushing the workout further than I had planned.

 Man what a difference a weekend makes! Though I got frustrated at some things during the day, I was so recharged from the weekend I didn’t let it phase me. I cruised through the work day and after went to the store to pick up a few things for dinner.

I had taken leftover meat out of the freezer to grill but needed a side and some vegetables so I went to see what looked good. I obviously couldn’t pass up some fresh corn and there was also a big sale on avocados so I grabbed two of those as well along with some couscous.

I made a simple marinade for the chicken (recipe below) and the boyfriend did the grilling while I made an avocado and tomato salad and prepared the couscous and corn. Everything tasted so fresh and delicious it was hard for me to stop, I”m glad I did though because now I have leftovers for lunch!

Grilled Chicken Marinade
For Two Pieces of Chicken
  • 2 TB of Olive Oil
  • 1 TB Rice Vinegar
  • 1 Tsp of Garlic Salt, Onion Powder, Sugar, Salt, Oregano and Parsley
  • Pinch of Pepper, Thyme and Basil
Mix all ingredients and pour over chicken. Poke holes in chicken with fork and flip, repeat on other side. Flip again and stick in the refrigerator for at least 30 minutes, can be covered and left over night though. 
What do you do when you don’t feel like working out?
I’m trying to get better and push myself to at least get 30 minutes in, but in the past I use to just skip it. Hopefully  now I can be better and just do a quick sweat which is better than nothing.
