Broiled Salmon and Smoothies

Man oh man am I glad that it is Friday! Yesterday I got so caught up at work I planned on updating the blog at home, then when I got home I realized I didn’t have my computer as I had left it at work. I was going to use the boyfriends until I realized I would have to download my picture editor on it and that just seemed like too much work. So you get a nice little two-for today!

Wednesday started off with the Strawberry Banana Smoothie and since the picture didn’t come out here is a new one!

At work I was pretty busy the whole day going through presentations so I was glad a packed a healthy lunch of salad, which I could then just thrown in some chicken from the lunch ordered the day before and have a filling meal while still being able to work through lunch.

After work I went to the boyfriends house and made dinner. It was a broiled Salmon Steak with mashed potatoes. There are zero vegetables here because I had eaten a smoothie for breakfast, a salad for lunch and two apples as snacks. I was fruit and veggied out, and also didn’t want to start to get stomach cramps. Broiled salmon is so easy to make and can be paired with almost anything you want like a salad, potatoes, corn, pasta with a white sauce etc. I’m pretty picky about my fish though and although the boyfriend claimed Market Basket had good seafood, I’m partial to Legal Seafood’s selection and will probably do that again or another fish market.

Broiled Salmon

  • Salmon steaks cut at least an inch thick
  • softened butter
  • minced garlic
  • salt and pepper
Heat up the broiler with the oven rack about two inches away from the flame, this is normally just the top rung. While that is heating up make a paste out of your butter and minced garlic. I didn’t put amounts because it depends on how many you are making and your personal taste. Some like the salmon more naked and some like it smothered. Lightly cover the salmon on both sides with the paste and then salt and pepper them. Put them under the broiler for 5 minutes, flip and do another five minutes. Take out and let them rest for a few minutes. Please don’t skip this step, it let’s all the juices settle down and the steak maintain them. If you serve and cut too quickly it will seem dry. 
While we were eating dinner I lit my new candle the boyfriend got me. You can’t really tell but it is a pink candle in a coconut shell. 

Yesterday started off with a tropical smoothie, which so was good. It almost felt like I was at a beach somewhere and if I had a little coconut extract it would have tasted like a frozen colada. 

Tropical Smoothie
Serves 1
  • 1/3 cup of mango
  • 1/3 cup of pineapple
  • 1 banana
  • 1/4 cup of yogurt
Just blend!

I then went to the gym and did two miles, I was feeling sluggish though so I could only do them in a ten minute mile pace. Work was packed and the day again flew by, but when I got out I was so happy that the weather had turned and it was beautiful out! The boyfriend was nice enough to take a walk with me and even wait while I took pictures. I could smell all the flowers coming out and the warm air just made me so happy.

Since it was so warm we decided to grill outside to not heat up the apartment with turning on the oven, so we made the chicken that I made here, along with some smiles and a salad. The smiles were made in the deep fryer and were so good. I could have eaten the whole bowl by myself, but instead I filled up on a lot of salad first.

I’m so happy the weather is finally turning and it looks like the weekend is going to be nice too. Hurray for summer! I hope everyone has a fantastic weekend!
