North End Night

Yesterday started off interesting, I woke up and put the bread in the oven that had been rising overnight. While not a complete fail like the last time it still didn’t rise enough. I’m giving it one more shot and then I am just admitting I cannot make bread without a machine.
Inside doesn’t look that bad, as this was cut while it was still hot. Still need to be about 50% taller
Then while I was driving into work my little car got its first off roading experience. A car pulled out of their lane and almost into the side of my car so I had to swerve into the grass. Luckily there was grass or William Wallace would be in the shop now. Apparently that put me in a mood because was accused of being mean and sensitive within about 20 minutes of each other at work.

The rest of the morning flew by though because work was so busy. I did have my favorite breakfast of toast with butter and honey which definitely picked me up out of my funk. About half way through the day I got the urge to go out for a few drinks an luckily my awesome coworkers were up for it.

I went home and got in a quick run (I think the pace might be a tad off because I have never been this fast, nor can I walk on water!) then I hopped on the T to go back down to the North End for the second night in a row! 


According to this I can also run across water! 
It was a beautiful night though! 
And Boston was beautiful as always
Tonight is going to have to be a rest night or I’m going to pass out at work tomorrow. We all went to dinner at Aria, which was fantastic, and then out to another bar for a drink. I had the mushroom raviolis which were amazing because they really piled on the mushrooms unlike some other places that will give you one or two. Before hitting the second stop I ran into Mikes and got two cannolis, I ate the Peanut Butter one when I got home. Oh my heaven!!!

Now on to the pizza bites recipe. I really am loving this for lunch and it keeps me full almost until my workout snack.


  • 1Cup Quinoa
  • 1 bag of Spinach Raw
  • 3 cloves of garlic (I used 6 but I’m obsessed with garlic)
  • 1 small onion
  • 1/2 bag of shredded mozzarella cheese
  • 2 eggs
  • 2Tb of basil
  • 1Tsp Oregano
  • Cooking Spray

Cook Quinoa according the the package. While that is boiling mince garlic and heat up a skillet on medium heat. Spay skillet and then toss in spinach and garlic and cook until spinach is fully wilted making sure to stir so garlic doesn’t burn. Finely chop onion while watching the quinoa and spinach. After quinoa is cooked combine all the ingredients and mix until fully incorporated. Spay a muffin tin and divide the batter equally. I used mini muffin tons but regular works as well.

Bake in an oven preheated to 350 for about 20 minutes. You know when they are done when they are golden on the edges.

Serve with pizza sauce.


These are also good heated up the next day for a quick lunch like I’ve been doing.

Have you ever tried to cook or bake something multiple times and couldn’t get it right?
I’ve never been able to not cook something correctly, bread is the first non dessert item I’ve tried to bake and it isn’t working out yet.
